Reserve Cut is a new contemporary kosher restaurant at The Setai Wall Street (40 Broad Street) in the Financial District. Albert Allaham, the owner of Reserve Cut, is a master butcher and the owner of high-end meat market The Prime Cut in Brooklyn, which serves top quality meats to customers throughout the New York area. He descends from a long line of expert butchers dating back over 200 years to Damascus in Syria, where his family ran one of the country’s most respected butcher shops.
